Koulich (Quick Russian Coffee Cake)

INGREDIENTS配料：

·3/4 cup warm water
·1 unbeaten egg
·1/4 cup raisins²
·1/4 cup chopped almonds
·1 teaspoon³ grated lemon rind
·1/2 cup sifted⁴ confectioners' sugar
·2-3 teaspoons⁵ milk

Method作法：

1)Dissolve yeast⁶ in water in large bowl.Add egg, raisins, almonds, lemon rind, and dry mix; stir well.

2)Let rise in warm place until double in bulk (45 minutes).Shape 2/3 of dough⁷ into a ball; place in well-greased 1-pound coffee can (can will be 1/2 full).

3)Shape remaining dough into ball; place in well-greased 16-ounce can. Cover; let rise until double in bulk (about 60 minutes).

4)Bake small loaf 30-35 minutes at 350°. Bake large loaf 35-40 minutes at 350°.

5)Combine confectioners' sugar, milk; dribble⁸ over warm cakes. Decorate with candies, candied cherries, almonds

6)Place one on top of other, or serve separately.
