I was out there though, I saw all those happy cows, they are not so happy.

Wisconsin master cheese maker Bruce Workman sees more holes in the pitch than you find in Swiss cheese.

Happy cows love Wisconsin, and nah, you have to have a changing climate like anybody else.

Workman owns Edelweiss Creamery. The small factory is one of more than 100 in Wisconsin. It churns out 14 varieties of cheese.

We produce the quality cheese and that , that's what we are going for.

About 15% of cheese produced in Packer Country is specialty cheese. Here at Edelweiss Creamery, the signature product is this : the Emmental.

I am the only producer of this style of cheese in the US.

Making it a specialty item versus a commodity cheese.

What California has is a lot of larger plants, and so their ability to make a lot of cheese fast has, has come on strong in the last two decades.

California, known more for Hollywood than Havarti, now produces roughly 23% of all cheese, compared to Wisconsin at 26%. But Workman expects his business and the dairy state's reputation to stay afloat.

Yeah, they've won some awards, but dah, if you look at the overall averages, Wisconsin still tops the chart.

Even if California tries to milk the spotlight in true Tinseltown fashion.
