Let’s have a little taste. Let’s do the traditional one first, so this is the bacon that I smoked in the cupboard. Mmm, nice sort of wardrobe flavor… actually,that smoke has done its job, and it’s really penetrated the bacon. And this is the bacon with the liquid smoke… well, the funny thing is, it’s really subtle. The meat hasn’t taken on so much smoke, but it’s a lovely subtle flavor. But out of the two, which one would I prefer? Well, in fact I actually prefer the subtle smoky flavor, but I like the traditional way of doing it. I don’t know why,call me old fashioned, but that isn’t bad at all.
