Now thishas been frozen. I’ve defrosted it. It’s just a big mass of sludge. Even theveg you CAN freeze can go wrong.

Now,when you freeze a carrot, it turns into a comedy carrot. Look at that. Losesall its shape or its texture. The reason for that is as it freezes, the watercontent in the vegetables begins to freeze, and form large crystals, and that startsto rupture all the cells. They lose all their lovely vitality and structure. Andend up wiggly. Or…mush.
