 Look at this. This is raw milk straight from the cow, it smells different.

Wow, and it tastes completely different.

It's  richer, has a different texture¹, and it's fuller.

And if you look on the bottle, there's a layer of cream.

Now, this is your standard supermarket milk, and the layer of cream(不好意思这里写错了，改为Cream) has disappeared.

So what have they done to it and where has it gone?

Well, the answer is, it's been homogenised.

So what does that do to the milk? Does it give it a longer shelf life?

And in fact, do we actually know what homogenisation means?

 

看看这个，这是直接挤出的生牛奶。它闻起来不一样。

哇，喝起来也完全不一样。

和超市的牛奶相比，它的成分是不同的，它所含的更多。

如果你观察一下瓶子，上面有一层奶油。

这个是标准的超市卖的牛奶，上面的那层奶油不见了。

他们都做了什么？奶油去哪里了呢？

答案是，牛奶杯搅拌均匀了。

这样做有什么作用呢？

这样是不是可以加长牛奶的保质期呢？

事实上，我们是否知道均化作用的含义呢？
