You may be surprised that your baked goods taste the same as usual, though they may have a slightly different texture. If a recipe calls for applesauce, you can use other types of fruit puree. Be sure to use the equivalent amount. Other useful substitutes for baking include sour cream for yogurt, and honey for maple syrup. If a recipe calls for a cup of wine, you can substitute it with a cup of chicken broth, a cup of water, or a cup of fruit juice plus two teaspoons of vinegar.
