Now, when you freeze vegetables at home,the results aren’t always that brilliant. This here is a bag of lettuce¹. Lovelyand healthy, and springy. Have a look what happens once you freeze it. Now thishas been frozen. I’ve defrosted it. It’s just a big mass of sludge. Even theveg you CAN freeze can go wrong.

Now,when you freeze a carrot, it turns into a comedy carrot. Look at that. Losesall its shape or its texture². The reason for that is as it freezes, the watercontent in the vegetables begins to freeze, and form large crystals, and that startsto rupture³ all the cells. They lose all their lovely vitality⁴ and structure. Andend up wiggly. Or…mush.
