It's a food tradition that will never be threatened,

however fast the city grows,

永远都不会被取代

and it's one of the national dishes of China.

它是一种中国特有菜肴

This fiery², bubbling cauldron of broth³ is known as hot pot.

这一大锅辣气腾腾的肉汤 就是火锅

You can order pretty much anything you like, but the catch is,

你可以点任何自己喜爱的菜品 但关键是

you have to cook it yourself.

你要自己煮

This is China's fondue,

这就是中国的火锅

except they've been eating hot pot for thousands of years.

要知道他们吃火锅已经有上千年历史了

Bamboo shoots. It's fantastic how they slice it.

竹笋 他们切竹笋的方式太棒了

There's no cooking here because all they do is prep, right?

他们不用煮菜 要做的只是准备各类菜品 对吧

Of course, this being Chengdu,

那是当然，这可是在成都啊

they do a mean ma la, numbing⁴ heat version here,

做得东西那可真是又麻又辣

and I want to know exactly what goes into it.

我很想知道他们到底要在里面放什么

This is where they make all their soup bases.

他们就是在这制作锅底

Look at that Sichuan peppercorn.

看这些花椒

That's a lot of flowered pepper.

花椒可真不少啊

The copper⁵ hot pot is shaped like the Yin and Yang symbol,

铜质的火锅形似太极图

to represent the balance of the mild broth on one side

阴边为清锅 阳边为辣锅

and the spicy⁶ on the other.

口味轻重平衡

So they put in dry chillies

他们在里面放入干辣椒

and then he puts in the flower Sichuan pepper.

There are many varieties of hot pot, but in this version,

火锅的种类有很多 但是这一锅的

the Yin side gets added flavour from a fish,

tomatoes,

番茄

and what looks like spam.

It might seem a weird⁷ combination for Western tastes,

but the buzz here is amazing

and it's clear that for the people of Chengdu,

hot pot is just as important

a social event as it is a meal.

As if the hotpot wasn't already spicy enough,

more stock and chilli oil is brought to the table.

That's a lot of chilli oil.

It's sealed in these bizarre clinical-looking bags,
