Dialogue 1
Jingjing: Hey Mark, what's that you're munching2 on?
Mark: It's a kind of whole-grain bread.
Jingjing: Yeah, but as you came in, I saw you take it out of a wrapper. Is it freshly baked?
Mark: No, it was baked almost a year ago. Yeah, here's the date on the package: December, 2018.
Jingjing: It looks pretty fresh. Does it have preservatives3 in it?
Mark: Nope. Just a little salt. I have to eat it within a few days after opening the pack.
Jingjing: Hmm. Cool idea.
Mark: Yeah, I've stockpiled this bread, and will probably have more on the way, with double-eleven discounts.
Jingjing: Let me try a piece. I might do the same thing. I'm not a big bread-eater though.
Mark: Here. Take this piece. I haven't touched this side yet.
Jingjing: Uh, it tastes alright. But I'm not crazy about it. Thanks for letting me try it, though. Hey, speaking of stockpiling, did you know the government kept tons of frozen meat in case of a price hike?
Mark: You mean like the one we're having now?
Jingjing: Exactly. African swine fever broke out last year, and lots of countries were affected4.
Mark: I know a little about that.
Jingjing: Well, the Commerce Ministry5 has now put that frozen pork on the market, to keep prices from going through the roof. So, China isn't having too much trouble with meat supply.
Mark: Big countries like China need to have policies like that.
Jingjing: Yeah, Pork always gets freezer burn when I try to do that. So it's pretty impressive, what the Commerce Ministry has done.
Mark: You said it, Jingjing.

Dialogue 2
Jingjing: Mark, would you like to hear more about the pork industry?
Mark: Sure. I don't know much about it.
Jingjing: Do you know how long it takes a sow to mature?
Mark: Let me guess: 2 years?
Jingjing: No. Just 10 months. But that still means the declining number of sows is a threat to the pork market.
Mark: I understand a lot of farms were closed. So, you're saying it might still take years for the livestock6 numbers to return to normal, right?
Jingjing: That's right. With depleted7 breeding stock, prices will go up and stay up as long as demand remains8 the same.
Mark: Well, that's basic economics. What's your guess—three years or so of unstable9 prices?
Jingjing: That's a fair guess. It's going to be tough. And there are many new rules.
Mark: I heard a lot of small farms were closed, while big ones have just gotten bigger.
Jingjing: That's been the industry trend for decades now. This outbreak just made it more pronounced.
Mark: Well, that sounds interesting. It also sounds like companies are putting all their eggs in one basket.
Jingjing: It's just cheaper to operate a few big farms.
Mark: Yeah, I guess so. And a big company could operate several big farms in different regions. That way, they'd be too big to fail.
Jingjing: Let's hope so. Anyway, there's always a place for small farms, even when it comes to pork production.
Mark: Yeah, a small place.
Jingjing: Well, it might grow, once the market gets better.
Mark: I'll check the packaging more carefully next time I buy pork.
