Baijiu is a tradition that is centuries old and full of secrets.

白酒有着好些个世纪的历史传统，并且充满了未知之谜

Sichuan Province is famous for its fiery¹ food,

but this city of Luzhou is also home to the strong aroma² of Baijiu.

不过这泸州城同时也是浓香型白酒的产地

Pure water from the surrounding Phoenix³ Mountains has long been a key part of the distilling⁴ process here.

采用周边的凤凰山上的纯净泉水，一直是蒸馏过程的关键所在

I have come to the country's longest continually running distillery here in Luzhou Laojiao.

我已经来到了泸州老窖，中国持续运转时间最长的酿酒坊

Here they have been making Baijiu for nearly 450 years.

人们在此酿造白酒已有近450年之久

The Baijiu is famous for its fierce, licorice flavours.

这里的白酒以其辛香甘甜的风味着称

What an amazing space. It's a real hive of activity.

It is like a fiery inferno⁵ bursting with fumes⁶.

Laojiao Baijiu is made out of grain sorghum⁷ which is constantly recycled.

New sorghum is mixed with fresh grain for each batch⁸,

meaning the drink has been flavoured with grains that are centuries old.

1 fiery
