During cooking, the salted cutlets are hung over a cauldron commonly seen in the kitchens of Miao ethnic⁴ households. 熏烤时，要把腌制好的肉挂在取暖做饭的火塘之上。

Pinecones, camellia fruit and orange peels are added into the fireplace continuously to give the smoked meat a pleasant smell. 还不断将松果、茶壳、桔皮等放入火塘这样熏烤出来的腊肉就会带着茶果的香味。

The best place for storage is the paddy heap in the barn, because it's dry and sun proof. 储藏腊肉的最佳地点就是谷仓的稻谷堆里，这里既避光又干燥。

Before cooked, the smoked meat has to be burnt on the surface with charcoal⁵ fire and cleaned with water in which rice has been rinsed⁶. 腊肉食用前先要用炭火烧皮然后用淘米水洗净。

Smoked meat fried with radish strips is one of the most common dishes on the Miaos' table. 将腊肉和萝卜干一起炒是苗家最常见的食用方法之一。

There are many ways to cook salted fish. 腌鱼的话吃法很多。

When it's deep fried, a low heat is necessary. 文火油煎，必须要火小。
